Slice French bread or Italian bread into one-inch thick slices. Scramble some eggs and add a teaspoon of rum (or a bit of rum flavoring for kids). Dip each slice on both sides in the egg mixture and cook on a skillet as you would any French toast.
Place a slice of French toast on each serving plate. Top with some Greek yogurt (because it's thicker and because it's yummy) and then halved fresh strawberries. Drizzle a little honey over all and enjoy!
You can use strawberry flavored yogurt or vanilla. For a creme fraiche flavor just use plain, unflavored, unsweetened Greek yogurt. Instead of honey you can use chocolate syrup or strawberry syrup.
This is so good and actually is pretty healthy. You don't have to tell them it's healthy though. When we have French toast we usually top it with vanilla yogurt and crushed pineapple in it's own juice. Sliced bananas are good on it too, but strawberries make it more Valentine-y. Come to think of it, this could be turned into a banana split version!

When we have this as "breakfast for dinner" we have scrambled eggs with the same meal to add more protein. It's a very filling meal, and one that has been a favorite with our family for years. Yum delicious. Sorry I was so super busy this week and did not see this in time for Valentine's Day. Next year....or, my birthday is only a few months away. Hmmmm........
